Sweet Potato Rolls

Tips to get you started:

· Check to make sure your yeast is within its “fresh by” dates.

· This can be made without the use of a stand mixer and dough hook, just knead the dough on a floured surface for about twice the amount of time listed for the mixer version.

Prep time: 30-40 minutes, plus 2 – 2 1/2 hours rise time

Cook time: 30 minutes

Serves: 14 rolls

Ingredients:

1 Cup heavy whipping cream

½ Cup water

4 Tablespoons unsalted butter

4 Tablespoons honey

1 Large egg

1 ½ Tablespoons dry active yeast

¾ Cup plain mashed sweet potato

2 Tablespoons coarse Kosher salt

4 Cups all-purpose flour

¼ Cup whole milk

Part one: In a medium saucepan over medium heat, combine water, heavy whipping cream, butter, honey and warm until the butter has melted and the mixture is at 100-110 degrees F. Remove the pan from heat and whisk in yeast and let sit for 5 minutes to bloom the yeast.

Part two: While the yeast blooms, combine in the bowl of a stand mixer fitted with a bread hook: flour, sweet potato mash and salt. Add the yeast and cream mixture to the bowl. Add the egg and mix on the lowest setting for about 2 minutes or until the dough forms a ball and no longer looks shaggy.

Part three: Transfer the dough to a well-oiled, large bowl and cover with a warm, damp kitchen towel. Set in a warm (70+ degree) place in your kitchen or home and raise for 60 minutes or until the dough has doubled in size.

Part four: Gently turn the dough out onto a clean, floured surface and knead 5-10 times to gently deflate the dough and get it to an even consistency. Portion out dough into approximately 14, 3 oz portions and roll into balls. Place the rolls 2-3 inches apart on a silicone liner or parchment lined baking sheet and allow to rise for another 80 minutes (they should double in size) under a warm damp towel. Pre-heat your oven to 350 degrees F toward the end of the raise time.

Part five: Brush the top of each roll with whole milk and bake at 350 degrees F for 25-30 minutes, or until golden brown on top.
