Grilled Greek Chicken

Tips to get you started:

· Don't allow the chicken to sit in the marinade for longer than 30 minutes as the acid in the marinade will start to make the chicken tough.

· Sumac can be troublesome to find, some markets carry sumac in the bulk spice section, amazon.com also carries it for purchase.

Prep time: 40 minutes

Cooking time: 10-15 minutes

Serves: 4

Ingredients:

1/2 Cup lemon juice

3/4 Cup Extra Virgin Olive Oil (EVOO)

4-5 Garlic cloves, minced

3 Tablespoons Oregano, dried

1 Teaspoon sumac, ground

1/2 Tablespoon sea salt

1/2 Teaspoon black pepper, ground

4 Boneless, skinless chicken breasts or 8 chicken tenderloins

Part one: For the marinade: in a large baking dish (I used a lasagna dish), combine lemon juice, EVOO, garlic, oregano, sumac, sea salt, black pepper.

Part two: Place 4 chicken breasts or 6-8 chicken tenderloins in the marinade for up to 30 minutes.

Part four: Grill at about 350 degrees F, flipping the chicken to grill both sides evenly (about 4 minutes per side) until the internal temperature reaches 165 degrees F on a meat thermometer, about 8-10 minutes.

Serving suggestion: This chicken pairs nicely with a Caesar or Greek salad for a light and summery meal.
