Mahi-mahi Tacos

Tips to get you started:

  • Mahi-mahi is my fish of choice for this recipe because it has a nice firm flesh that becomes flaky when you pan fry it, making it easy to shred and put into taco shells. Cod or rock fish could also be used for this recipe.

  • This recipe would also work well with medium sized shrimp or even jack fruit for a vegetarian version!

Serves 4

Ingredients:

Spice mix:

1 Teaspoon sea salt

1/2 Teaspoon black pepper

3 Teaspoons ground cumin

1 Teaspoon ground cayenne

3 Teaspoons dried oregano

3 Teaspoons granulated garlic

3 Teaspoons onion powder

1 1/2 pounds Mahi-mahi filets

2 tablespoons Avocado oil or extra virgin olive oil (EVOO)

8 small corn or flour tortillas

Suggested toppings: Salsa or pico de Gallo, queso fresco, corn, fresh pineapple or mango, pickled red onions, pickled jalapeño, sliced avocado, guacamole.

Part one: In a medium bowl, combine all spice mix ingredients.

Part two: Gently pat the Mahi-mahi dry with a paper towel, and liberally coat the fillets with the spice mix on both sides.

Part three: In a large frying pan over medium high heat, heat the avocado oil until shimmering but not smoking. When the oil is hot, carefully add the fish to the pan. Cook for about 3 minutes, or until the fish turns opaque to about 1/2 way through the filet and then flip the fish to cook the other side for approximately 3 minutes.

Part four: When the fish is cooked, break it into bite sized pieces and mix these together a bit to distribute flavor evenly.

Serving suggestion: Serve fish on warm "street taco" sized tortillas, with your favorite toppings. I love corn, queso fresco, pineapple and some fresh pico de Gallo ( see my recipe here! ) and a little guacamole (see my recipe here!) on the side.
