Blueberry Lemon Bread

There are few things that speak of summer to me, more than blueberries and lemons! Meyer lemons are sweeter than traditional lemons and lend a more floral note to the bread.

Tips to get you started:

  • In this recipe I focus on modifying for several things: Gluten, added sugars, and egg sensitivity.

  • Meyer lemon skins are quite oily and softer than regular lemons, making them hard to zest using a zester or micro-plane, I skin off some of the peel with a sharp knife, making sure not to take any of the white pith, and chop it very finely to make my zest.

Ingredients:

Dry ingredients:

1 ½ Cups Old Fashioned Oats

2 Cups Almond flour

2 Teaspoons baking powder

1 ½ Teaspoons xanthan gum

¼ Cup Truvia brand stevia crystals

½ teaspoon kosher salt

Wet ingredients:

3 Medium over-ripe bananas

1/4 Teaspoon Meyer lemon zest

¼ Cup Meyer lemon juice

¾ Cup Coconut or avocado oil

1 Teaspoon pure vanilla extract

½ Cup water

Fruit added before baking:

1 Pint blueberries

Part one: Preheat your oven to 350 degrees F. Grease a medium sized baking dish or large bread loaf pan and set this aside.

Part two: Combine all dry ingredients in a large mixing bowl, mixing well and ensuring any lumps have been knocked apart.

Part three: Peel your over ripe bananas, place them in a small mixing bowl and smash the bananas in the bowl, using a fork. Add the remaining wet ingredients to this bowl and mix well.

Part four: Transfer the wet ingredients to the bowl with the dry ingredients and stir to combine. Once this mixture has been combined, gently fold in your blueberries.

Part five: Transfer the entire mixture to your prepared baking dish and place in the preheated oven. Bake for 35-45 minutes or until a toothpick inserted into the dough comes out without any wet dough attached.
