Bison and green chili tacos with lime crema and pickled cabbage slaw

Tips to get you started:

· The second half of the lime used for the crema, may be cut up and served with the tacos

· I use Cholula Chipotle Hot Sauce

Prep time: 30-60 minutes (includes some idle time)

Cook time: 10-15 minutes

Ingredients:

For the taco meat:

Avocado oil spray

1 Lb. ground bison

2 Tablespoons granulated garlic

1 Tablespoon granulated onion

1 Teaspoon dried oregano

½ Teaspoon ground cayenne

1 Tablespoon chili powder (or more, to taste)

2 Tablespoons ground cumin

1 4 oz can mild green chilies, diced

¼ Cup tomato sauce

Salt to taste

For the cabbage slaw:

3 Carrots, peeled and julienne cut

1 Cup shredded purple cabbage

½ Cup thinly sliced red onion rounds

¼ Cup distilled white vinegar

1 Tablespoon honey

1 Teaspoon sea salt

1 Teaspoon ground black pepper

For the lime crema:

½ Cup sour cream

½ of a lime, juiced

¼- ½ Teaspoon chipotle sauce

Part one: Start the slaw: In a medium glass or other non-reactive mixing bowl, combine the white vinegar, honey, sea salt, black pepper and stir well. Add the carrots, red onion and purple cabbage and set aside for at least 30 minutes, stirring occasionally to coat all the vegetables in the pickling liquid.

Part two: Coat the bottom of a large frying pan with avocado oil spray and heat over medium high heat. Add the bison and brown, while carefully breaking up any large clumps of ground meat. When the bottom of the grind has browned a little, add garlic, onion, oregano, cayenne, chili powder, cumin, green chilies, tomato sauce, and salt to taste.

Part three: Continue browning the meat and mixing in the spices, until most of the meat is fully cooked. Cover and remove from heat.

Part four: Mix up the crema! Combine sour cream, lime juice and chipotle sauce in a medium mixing bowl.

Serving suggestion: Serve on meat topped with slaw and crema on warm tortillas with garnish of lime, fresh cilantro and enjoy! Tortillas can be omitted for a lower carbohydrate meal.
