Chocolate Zucchini Bread Muffins
Tips to get you started:
· Zucchini bread is a great way to use any extra-large plants you find hiding under the leaves of your garden!
· Before shredding the zucchini, cut the top and bottom off, and then cut in half lengthwise. Scoop out any large seeds. Shred the zucchini on a box grater or in a food processor with shredding disc installed.
· Once the zucchini is shredded, place it in a clean kitchen towel and wring out excess liquid.
· These muffins freeze well, so I usually freeze half of the batch in an airtight container for grab and go breakfasts/treats down the road.

Serves: 24 muffins
Ingredients:
3 Cups shredded zucchini
2 Large eggs
¾ Cup Coconut oil
2 Teaspoons baking soda
1 Tablespoon ground cinnamon
1 Shot espresso, or 1 Oz strong coffee
¼ Cup unsweetened cocoa powder
½ Cup packed brown sugar
¾ Cup granulated white sugar
1 Teaspoon sea salt
2 Cups all-purpose flour
1 Cup chocolate chips
Part one: Preheat oven to 350 degrees F. Line 2 12-cupcake tin with cupcake wrappers (or line one pan and repeat for batch 2). In a large mixing bowl whisk together oil, eggs, and coffee/espresso. Stir in the shredded zucchini.
Part two: To the bowl, add baking soda, cocoa powder, brown sugar, white sugar, and salt and stir well to combine.
Part three: In small amounts, stir in the flour and when that is all well combined into the mix, stir in chocolate chips.
Part four: Pour approximately ¼ cup of batter into each cupcake wrapper and bake for 18-22 minutes, or until a toothpick inserted comes out clean (note, if you hit a melted chocolate chip, it can deceive you!).
Part five: Cool the muffins on a wire rack, and store in an airtight container.
